Creole is a tomato based dish based on French cuisine and its travels over time picking up spices from around the world and combining to create a warming wonderful flavour
Take celery, onion and peppers - diced and finely chopped, sweat down in a large pan, add chopped tomatoes and a 1tsp of seasoning per meal (4 for 4 people) season with salt as you like - you can add stock or water to create a thinner sauce or help with reduced liquid before its ready
If you like a hot chilli in your dish add it at this stage too - stir in and blend with the simmering, cayenne is traditional, but you can use any chilli you like
If using prawns you can add the prawns into the tomato mix towards the end of it being reduced down to a thickness you like, or add chicken browned in a separate pan and simmered through until cooked
Works great with all manner of veg and meats
Ingredients : Paprika, Garlic, Onion, Pepper, Aleppo, Oregano, Thyme
No salt so you can add what you like, no sugar because its not needed
