Ancho Chilli Flakes are just that, whole Ancho pods that are dried and flaked
Ancho chilli is the most sold chilli in Mexico, and we only use the highest grade of ancho which is flaked into uniformed size of around 3mm pieces
When cooking with ancho flakes they will not break down but will go very soft being a blended texture ideal for any sauce
Typically 1 heaped teaspoon of flake is 1/2 a whole pod
To make an ancho paste simply add warm water, wait 2-5 mins till soft and stir, can be blended
