The Pimento de Padron originates from Spain or the region of Galicia from the area around the town of Padrón. This variety is unusual in that the chillies can look very different from each other, and can also vary in their spiciness. So there are often several mild chilies, and then suddenly a very fiery one.
In Spain this variety is traditionally eaten green as a starter or as tapas. These chilies are usually fried in oil, and a pinch of salt is added to taste. However, they are also suitable for grilling, pickling or stuffing
