Nutmegs are a wonderful seed with three parts - the outer shell, Mace covering the seed and the seed itself
Nutmeg powder is the seed only or it should be, some producers use the only shell, mace and seed in nutmeg powder as its "just quicker" than processing the whole seed into its components
This produces a slightly bitter flavour, our nutmeg powder is processed correctly, the shell is not used, mace is separated and the seed is dried and powdered to produce a wonderful warming sweet nutty flavour
