Guajillo is Pronounced Gwah Hee Hah, it takes practice but well worth the effort for this wonderful Mexican Chilli
Don’t let the name Guajillo warn you off though, as with all Mexican Chilli the Guajillo has been cultivated by generations of master famers
Guajillo chilli is Tannic and Spicy in flavour, goes great with all vegetables and meat dishes
Makes a great Guajillo dipping sauce as well and usually found in Mexico in many forms and meals
Becoming popular in the UK and EU and once tried you will want to stock always
Use Guajillo in Stews in the Winter and BBQ Sauces in the Summer, all year round supply for all year use

The Guajillo pods are whole and include the seeds, however due to the drying process the seeds are sterilised and it is very doubtful a seed will germinate

Guajillo Chili Yum!
I bought these because I wanted to try making chili crisp oil. They were great and the oil turned out wonderful. I'm sure I will be ordering them again.

These are greatLove these. Not hot but add depth to chilli con carne and anything tomato/Med type dishes.

Beautiful combination
Made a mole with a bunch of these mexican dried chillis (Guajillo, Pasilla, Ancho Grande and Mulato) and the flavour profile was delicious and complex. Been making many sauces, and this was probably my second favourite.
